My yellow pear tomato plant--my ONE yellow pear tomato plant--produces a seemingly never-ending supply of tomatoes. I've been searching for recipes to use them up, and found this one that looked promising. I've adapted it slightly. It's quick, simple, and delicious. I think next time I make it I will add chopped fresh parsley as well.
Yellow Pear Tomato Salad
6 cups yellow pear tomatoes
salt and pepper to taste
2/3 c. buttermilk
1/4 c. sour cream
3 T snipped basil leaves
1 shallot, minced
2 garlic cloves, minced
Wash the tomatoes and place in bowl. Combine other ingredients and slowly pour over tomatoes. (The dressing will make more than is needed.) Toss gently. Serve remaining dressing at table if desired.
Do you have any yellow pear tomato recipes to share? I have more tomatoes.
Thanks for abundance.
This looks and sounds delicious! I too think parsley would add a nice touch. Thanks for sharing the recipe.
ReplyDeleteI love to eat the little pear tomatoes as snacks. It didn't occur to me to use them in a salad.
