Today's recipe comes as an answer to my youngest son's request for more crock pot recipes. Cheesy Potato Soup is easy, delicious, and economical, too.

Cheesy Potato Soup
In a 4-quart crock pot, combine:
6 potatoes, peeled and chopped
1/2 onion, chopped
2-1/2 cups water
2 teaspoons salt
1 teaspoon garlic powder
1 tablespoon parsley flakes
1/2 teaspoon pepper
Cover and cook for 4-1/2 hours on high, or 8-9 hours on low. Then add:
1-1/2 cups shredded cheddar cheese
1-1/2 cups milk
Continue to cook for 30-60 minutes. Use a potato masher or immersion blender to puree soup, if desired.

I love potato soup but have never made it with cheese. Instead, I enjoy it with a grilled cheese sandwich.
ReplyDeleteThis recipe is very simliar to my potato soup (minus the cheese). I usually make this dinner on a cold day and it makes great for leftovers :d
