I remember eating good, healthy meals as a kid. Junk food didn't come into our home much, so I always loved it when Mom fixed this Fritos Casserole.
I've adapted Mom's recipe just a tiny bit (petite diced tomatoes instead of whole stewed tomatoes, for example), but the gist of it is what I remember eating as a kid.

I've adapted Mom's recipe just a tiny bit (petite diced tomatoes instead of whole stewed tomatoes, for example), but the gist of it is what I remember eating as a kid.
Fritos Casserole
Place a layer of corn chips on the bottom of a 9 x 13 pan. Cook together 1 pound of ground beef and one chopped onion. Drain off the grease. Add 2 (15 oz.) cans of kidney beans, one (15 oz.) can of petite diced tomatoes, and 1 tablespoon taco seasoning mix to the ground beef and onion. Place on top of the corn chips. Sprinkle 1 cup grated Cheddar cheese over the mixture, and then put one small can sliced olives on top of the cheese. Top with a layer of corn chips and bake at 350° for 20 minutes.

I must try this recipe - it sounds like the chili Fritos I enjoyed when in college.

ReplyDeleteThis looks like a great recipe to try. I buy variety packs of chips for lunches and Fritos are always the last to go. I'll bet my family will eat them in a casserole however. :)
